
Nicole Kasper, Ph.D., assistant professor of food studies, oversaw the food lab construction, funded but the Outcalt Foundation. The renovated lab/classroom now includes 10 cooking stations, with room for a class of up to 18. The space is used to teach cooking skills and nutrition for the food studies classes and has been used by community courses through the Extended Studies聽program.

Theresa O’Halloran, Ed.D., counselor education clinical supervisor, was awarded聽the national聽Approved Clinical Supervisor (ACS) credential through training, clinical and supervision experience. This national certification is the highest clinical supervision聽certification聽in the US.
Tracey L. Robinson, Ph.D., professor of kinesiology, has two graduate students who will present their thesis research at the Rocky Mountain American College of Sports Medicine (RMACSM) annual conference April 8-9 in Golden, Colo. Their research was part of our ongoing exercise and cancer survivorship program. They looked at what if any effect adding a nutritional supplement would have on the cancer survivors’ responses to exercise. De’Aijah Paulk looked at whey protein and Payton Billingham looked at creatine.
Matthew Valverde, D.M.A., associate professor of music, recorded an album with , led by Ahmed Anzald煤a, in the Twin Cities, Minnesota in August 2021. The album will be released on Bridge Records April 1, 2022.
Valverde was featured as tenor soloist on Ariel Ram铆rez鈥檚聽Misa criolla, an Argentine mass for soloist and mixed chorus in Spanish that features Latin American rhythms and song forms, accompanied by Andean instruments.
He will travel back to the Twin Cities promptly after the spring commencement ceremony to begin rehearsals for Border CrosSing鈥檚 album release concert/celebration. The group will perform all the music featured on the CD at Unity Unitarian Church in St. Paul, MN on Saturday, May 21, 2022.
